旬とはなにか・・・
国語大辞典（小学館 1988）によれば「魚介・果物・野菜など、季節の食物が出盛りの時。物がよく熟した時節。また、最も味がよい季節。」となっている。つまり、魚に限れば「獲れるとき」と「旨いとき」の二つの意味があることになる。
愛用の魚と貝ポケット図鑑（木村義志1992）では、これらに加えて、「文化上の旬」として土用の丑の日のウナギや初カツオを旬として挙げている。
これに対し、お魚の文化誌（有薗真琴1997）では「走り」という概念に触れ、これを旬と区別し、初かつおは走りに分類してます・・・どうやら、旬の定義自体にも人によってややブレがあるようです。
さらに、旬を調べると魚種によっては、かなりばらついています。その原因は「同じ魚でも大きさによって旬が異なる」「地域によって水温が異なり、旬が異なる」「旬の長さが人によってはこの月が最高！とかなり絞り込む場合がある」などとブレが生じます。
魚の旬を調べましたが、文献の表現が四季で表現されたり、月で表現されたりと、とりまとめは結構、難しいのですが、とりあえず、冬は1-3月、春は4-6月、夏は7-9月、秋は10-12月と、かなり乱暴に取りまとめました。
・・ということで、下の「魚の旬」はかなりラフにみてください。「1-2ヶ月の狂いは小さい小さい。ほとんど同じ。」くらいに考えてください。

About "Shun"
"Shun" means the seasons of the fish as foods. "Kokugo daijiten"(Japanese dictionary 1988 Shogakukan) say that it is the seasons abundance in the fish, fruits, visitable, and other foods or season that the foods become most delicious. And, "Sakana to kai pocket zukan"(illustrated reference book) say shun include cultural custom of foods.Osakana no bunkashi (Arizono1997) say that "Hashiri" (start of the season) is different from these shuns.
But, "shuns" vary from person to person. And, unifying the some reference is very difficult, because, Shun was express by the four seasons or month. So, Shun of fishes are very rough.
